Our story so far...
Jonathan Bisley and Lou McDowell – the owners of Queenstown’s Flame Bar & Grill – had been looking for another outlet for their creativity. A space to explore exciting, new culinary styles and flavours. On a culinary scouting trip around Europe, Jonathan found his inspiration in Barcelona – the primal alchemy of charcoal grilling and the unique flavours that result from cooking over hot embers.
Jonathan decided to import state-of-the-art charcoal ovens capable of delivering that smokey, searing heat consistently, and after lengthy experimentation and refinement, he and Executive Chef Shane Avant have coaxed incredible flavours from some of New Zealand’s best food producers.
The result of this creative endeavour is Sunfire, Queenstown’s new home of culinary excellence.
Crafted with Care
It’s simple – we do everything we can to make the best culinary experiences possible. We sear over charcoal in our Josper oven. We smoke over applewood our bacon, salmon and tomatoes. Our chefs prepare fresh Ricotta, Labneh, Harissa, dressings, sauces, and jus and our in-house butchery guarantees the finest cuts.
